Tofu Chickpea Tomato Sauce with Pasta Recipe

250g Tofu
500g Chickpeas
Tomato sauce (800ml canned crushed tomatoes)
Garlic (2 cloves)
1 yellow Onion
Sambal oelek to taste (or other chili sauce)
Herbs (basil, oregano, or thyme)
Cheap red wine
Pasta of your choice
Directions
- Press the tofu to remove excess moisture, then crumble or cube it.
- Sauté garlic and onions in a large pan until softened and fragrant.
- Add sambal oelek, I use abot a tablespoon
- Add a good splash of red wine to the pan and cook for 2-3 minutes to let the wine reduce slightly.
- Stir in the tofu.
- Cover the pan with a lid and let the tofu simmer for 5-7 minutes.
- Pour in the tomato sauce,
- Herbs, stir well, and cover again. Let it simmer for another 10 minutes.
- Add the chickpeas and cook for an additional 5 minutes until heated through.
- Toss the sauce with your favorite pasta and serve.
Notes
- You can do the same basic recipe without tofu for a lower budget version
