My Best High Protein Tofu + Seitan Vegan Meatballs

These high-protein tofu balls are my favorite Vegan Meatballs! An excellent addition to your plant-based meal plan!

Ingredients

  • 400g firm tofu (14 oz)

  • 1 dl all-purpose flour (1/3 cup)

  • 1 dl seitan flour (1/3 cup)

  • 1 dl bread crumbs (1/3 cup)

  • 1 tbsp mushroom soy

  • 1/2 dl sunflower seeds (1/4 cup)

  • 1/2 dl rolled oats (1/4 cup)

  • salt and pepper to taste

  • a pinch of sugar (optional)

Directions

  • Start by blending the sunflower seeds and rolled oats together until they are almost like a powder.
  • Mush the firm tofu with your hands in a colander, breaking it down into a crumbly texture without pressing it.
  • In a large mixing bowl, combine the mashed tofu with the blended sunflower seeds and oats, along with all-purpose flour, seitan flour, and bread crumbs. Stir everything together thoroughly until well mixed.
  • Add the mushroom soy, salt, pepper, and a pinch of sugar if you’d like. Taste and adjust the seasoning.
  • Once the mixture is ready, use your hands to form balls that hold their shape.
  • For cooking, you have two options. You can heat oil in a skillet over medium heat and fry the meatless balls until golden brown on all sides, or bake them in a preheated oven at 200°C on a lined tray for 20-25 minutes, turning them halfway through.

Notes
