Olive oil
2 cloves garlic crushed
2 cups Chickpeas
Chili flakes or powder
Salt and pepper to taste
For the Sauce:
2 tomatoes
1 bell pepper
1/2 cup roasted sunflower seeds
1 block firm tofu
2 tablespoons lemon juice
herbs such as parsley or basil
Directions
- Cook pasta according to package instructions and set aside
- Heat olive oil in a pan over medium heat
- Crush garlic with a knife and peel
- Throw into the pan and sauté until slightly soft
- add chickpeas to the pan with chili flakes salt and black pepper
- stir to coat the chickpeas in the garlic and seasonings and cook until golden and fragrant
- Roast tomatoes, bell pepper and sunflower seeds in the oven for 20 minutes
- Throw the veggies, seeds, tofu, lemon juice and herbs into a blender
- blend until smooth and creamy
- Add the sauce and chickpeas to the pasta pot and toss until coated
- Serve warm with extra herbs and optional nutritional yeast
