Ingredients

  • Seitan flour (vital wheat gluten): 4 dl

  • Wheat Flour: 1 dl

  • Water: 4 dl (1 dl hot, 3 dl cold)

  • Vegetable Bouillon Cube: 1

  • Salt: 1 tsp

  • Liquid Smoke: To taste

  • Bay Leaves: 2-3

  • Onion Powder: To taste

  • Nutritional Yeast: 2-3 tbsp

  • Canola Oil: 0.5 dl

Directions

  • Mix the wheat flour and seitan together.
  • Boil 1 dl of water, dissolve the vegetable bouillon cube and salt, and add 2-3 bay leaves.
  • Add liquid smoke, onion powder, and nutritional yeast to the broth to taste.
  • Add the remaining 3 dl of cold water and canola oil to the broth.
  • Pour the liquid mixture into the flour and seitan blend. Knead well until combined.
  • Place the mixture in a loaf pan, cover with foil, and bake in the oven at 150°C (300°F) for about 30 minutes to 1 hour until firm and rubbery. Alternatively, cook at 100°C (212°F) with extra broth added intermittently.

Notes

  • – Adjust seasoning to taste before mixing with the dry ingredients.- The final product should have a firm, rubbery texture.- Store leftovers in the refrigerator for up to two weeks or freeze for longer storage. Slice and use on sandwiches or chop in food
