Vegan burrito with pickled red onions

10 minute Pickled Red Onions

This is both my favorite and the simplest method of adding an extra touch to any dish. These pickled red onions will stay fresh in a jar in your fridge for about 2 weeks, ready to add to any sallad, burrito or burger.

Ingredients

  • 2 medium-sized red onions

  • 1 deciliter of sugar

  • 1/2 deciliter of distilled white vinegar (12%)

  • 1 deciliter of water

Directions

  • Slice the onion to thin rings
  • Put them in a heat-safe jar
  • Bring the water to a boil
  • Turn off the heat
  • Add the sugar and vinegar and combine until the liquid is clear
  • Pour over the red onion
  • Let cool
