  • Seitan bites

  • Pickled red onion

  • Tahini sauce

  • Shredded lettuce

Directions

  • Make sure you have seitan bites and pickled red onion (recipes below)
  • Lay a tortilla flat
  • Add seitan bites, pickled red onion, and any optional fillings.
  • Drizzle with tahini sauce
  • Roll the tortilla into a burrito.

Ingredients

  • 4 dl vital wheat gluten

  • 1 dl all-purpose flour

  • Water

  • 7 dl water

  • 1 bouillon cube

  • Soy sauce

  • 1 tablespoon tomato paste

  • Garlic powder

  • Onion powder

  • 1 tablespoon vinegar

  • Thyme

  • Oregano

  • Chili or chili sauce

Directions

  • Mix the vital wheat gluten and all-purpose flour in a bowl
  • Boil the water, make a broth with tomato paste, soy, bouilon cube, garlic powder, onion powder and optional chili or paprika
  • Combine wet and dry ingredients and mix until combined
  • Knead the dough for a couple of minutes (too much kneeding will make a tough seitan)
  • Form it into a thick sausage shape
  • Preheat the oven to 100°C and bake for about 30 minutes
  • Prepare the marinade by mixing soy, some oil, vinager, tomato paste. chili sauce, garlic and herbs
  • Remove the seitan from the oven and cut it into bite-sized pieces
  • Coat the pieces in the marinade
  • Increase the oven temperature to 150°C
  • Bake until soft inside with a crispy surface
