2 eggplants
Chipotle paste

400g Chickpeas
Spirulina powder
Fresh or frozen parsley

Directions
- Slice the eggplants into 1 cm thick slices.
- Marinate the eggplant slices in chipotle sauce, a splash of olive oil, tomato paste, salt, and a splash of vinegar.
- Cut the broccoli into bigger pieces.
- Add mustard seeds to the broccoli.
- Cut an onion into slices.
- Bake the marinated eggplant, broccoli, and onion in the oven until cooked and golden.
- Prepare the hummus by blending the drained chickpeas, tahini, lemon juice, fresh parsley, a teaspoon of Dijon mustard, and spirulina powder for added nutrients and color.
- Leaving the garlic out for now.
- Place the hummus on the bottom of a plate. Spread it out in a circle using a spoon.
- Arrange two slices of baked eggplant on top of the hummus.
- Add some baked broccoli pieces on the plate.
- Heat olive oil with whole cloves of garlic until the garlic is frying but not browned.
- Place a couple of garlic cloves on the plate and drizzle about a tablespoon of the hot garlic-infused olive oil over the greens.
