This Potato & Leek Soup has been my favorite soup since I was a kid!
Since soups tend to be a lighter food, I followed these hacks to make the soup more satisfying, to tweak the recipe a bit -upping the fat and protein content.
This potato & leek soup is super creamy, delicious, naturally vegan and is perfect for this soup season!
Potato & Leek Soup

6 Potatoes
1 Leek
2l veggie broth
1 tbsp lemon juice
olive oil
2 tbsp sunflower seeds
1 dl red lentils (optional for more protein)
1 dl oat cream
Directions
- Soak half of the sunflower seeds and the lentils in hot water
- Slice potatoes and chop the leek
- Add to a pot over medium high heat with some oil
- Sautee for about 10 min
- Add the broth, lemon juice and bring to a boil under a lid
- Strain and rinse the lentils and sunflower seeds. Blend.
- Add the blended seeds and lentils to the pot.
- Let boil until the potatoes are falling apart easily.
- Blend slightly, I prefer having chunks left and not blending until smooth.
- Pour in some oatcream
- Roast the rest of the seeds in a pan for garnish
- Serve with bread and vegan butter.
Notes
- I added some tahini as well for more creamy nutty flavor
- I like to infuse olive oil with garlic and either dip the bread in or drizzle on top of the bowl of soup
